Tres Brujas Real Food for Real People Mother Approved


Hi all! Shannon and Skye here from Tres Brujas - Frozen Gourmet Dinners.

As we move forward through these times of uncertainty and deeper solitude, we would love to keep cooking for you. We are working one-on-one with local farmers to ensure we still have access to the best organic produce available to work our kitchen magic, while incorporating a delivery/pick-up plan. We don’t want to add to the clutter of your phone, but as we work on getting our website up and running, this is the easiest way to reach all of you. Our plan is to update you with our inventory weekly and sell our dishes on a first-ordered, first-served basis. Please let us know if you are not interested in receiving this information and we will remove you from the list.

While food safety is always a top priority, during these times we want to ensure we are keeping our supply chain further protected. Therefore, please be sure to make an appointment to pick-up at our kitchen located in Tinamastes on Mondays or Fridays. Delivery options will depend on how many orders we receive from your zone on a weekly-basis.

We source the best ingredients we have access to here in Costa Rica. Happy, clean, toxin-free meat and produce from happy, clean, toxin-free farmers; wherever we can. Menu

Thai Coconut Curry

A variety of veggies and herbs sautéed and stewed in fresh coconut milk and our homemade curry paste; loaded with beneficial medicinals like turmeric, ginger, galangal and lemongrass.

Instructions: remove container from the freezer and defrost (on the counter in a water bath or overnight in the fridge). Place contents in a pan over medium heat. Once the sauce boils, reduce to low heat and let simmer for a few minutes. Be sure to stir regularly as to not burn the bottom.

Serve over a bed of rice or dark greens. Topped with an avocado.

Vegan Option: 7,500c per 2 person serving

With Chicken: 8,500 per 2 person serving

Dal with Curried Lamb

A delicious, warming combination of lamb and lentils stewed in our homemade lamb broth with ayote, cauliflower and dark greens. Seasoned with curry powder, ginger, and a dollop of tamarind and butter. This is sure to put a smile on your face from the first bite.

Dina’s Coconut Fish Soup

A delicate medley of fresh red snapper and veggies sautéed with thyme, cumin seed, and a touch of cayenne stewed in our homemade coconut milk and fish stock.

Instructions: remove container from the freezer and defrost (on the counter in a water bath or overnight in the fridge). Place contents in a pan over medium heat. Once the soup boils, reduce to low heat and let simmer for a few minutes. Be sure to stir regularly as to not burn the bottom.

Serve with a crusty piece of bread ‘n butter and side salad.

Sprouted Lentil Soup (Vegan)

This masala spiced, sprouted lentil soup is nothing short of mouth watering. Sautéed with fresh ginger, garlic and onion; and stewed in our fresh coconut milk and homemade tomato sauce. Simple, yet scrumptious.

Instructions: remove container from the freezer and defrost (on the counter in a water bath or overnight in the fridge). Place contents in a pan over medium heat. Once the soup boils, reduce to low heat and let simmer for a few minutes.

Top with avocado slices and a squeeze of lime. Serve with a side salad.

Classic Meat Lasagna

Lasagna noodles layered with our scrumptious homemade tomato beef bolognese and cheesy béchamel sauces. Topped with a tangy combination of ricotta and parmesan cheese. Comfort food at it’s finest.

Instructions: Remove pyrex dish from freezer and defrost. Preheat oven to 400F or 200C. Make sure the container has reached close to room temperature before placing it in the oven (this is very important because if the glass container is too cold it will crack in the hot oven). Once your lasagne is defrosted, remove the lid, place on a baking sheet and into the oven. Bake for 40-45 min. Check regularly. The top should be crispy, sauce bubbling, and heated through.

Serve with a side salad.

Ayote and Kale Lasagna (Vegetarian)

Missing the taste of autumn evenings? These delightful layers of ayote squash and brown butter puree, sautéed kale, homemade creamy béchamel sauce and noodles, dusted with a crunchy tang of ricotta, parmesan and walnut mix will surely bring a warming smile to your heart.

Instructions: Remove pyrex dish from freezer and defrost. Preheat oven to 400F or 200C. Moroccan Meatballs and Spicy Tomato Sauce

Our moroccan inspired meatballs combine a spice blend of cumin, coriander, and smoked paprika with fresh ginger, garlic, onion and happy ground beef. Smothered in our rich tomato sauce (with a bit of kick!) and your taste buds are sure to be tantalized.

Instructions: Take sauce out of freezer and defrost overnight in the fridge or on the counter top. If using an oven, preheat to 375F or 190C. Place desired amount of balls on a baking sheet. Once oven is heated, place the tray in oven for 8-10 min (until heated through). While the meatballs are in the oven, pour the defrosted sauce into a saucepan and cook over medium heat, stirring occasionally. Add cooked meatballs to sauce. If using a skillet, heat over medium-low heat, with a splash of olive oil to avoid sticking. Once skillet is heated, add desired amount of balls, rotate throughout cooking to brown all sides. Once meatballs are heated through, lower heat and add desired amount of sauce to the skillet. Spoon sauce over balls as it cooks.

Once balls and sauce are heated through, pour over pasta or a bed of greens. Garnish with fresh mint.

Cauliflower Bolognese (Vegetarian)

Our vegetarian twist on a classic tomato bolognese sauce! Cremini mushrooms and riced cauliflower sautéed amongst onions and garlic; then stewed with our roasted red pepper tomato sauce and fresh herbs.

Instructions: Remove jar from freezer and defrost. Pour the sauce into a pot and simmer over a medium low heat, stirring regularly as to not burn the bottom. Toss with cooked pasta and sprinkle with parmesan cheese. If a thinner sauce is desired, add 1/4 cup of your pasta water and a pinch of salt.

Roasted Red Pepper Tomato Sauce

This delicious combination of roasted red pepper, roasted garlic, fresh herbs and tomatoes is the perfect partner for your spaghetti dinner or pizza night.

Instructions: Remove jar from freezer and defrost. If using for pasta, pour the sauce into a pot. Simmer on a low heat, stirring occasionally, until heated through. Toss with cooked pasta and serve. Making pizza? Spread desired amount on your dough, add toppings and bake.

Chocolate Chip Cookie Dough

A delightful indulgence ready in under 10 minutes! Made with organic whole wheat flour, sugar, eggs and grass-fed butter.

Instructions: Preheat your oven to 375F or 190C. Remove frozen cookie dough from freezer, slice into desired size (we recommend 2-3 tablespoons per cookie). Place onto a baking sheet and bake until just turning brown, about 8-10 minutes depending on size.

Packaging

Our meals will be served in reusable plastic and oven-safe pyrex containers. Our impact on our planet is very important to us. Therefore, from the get-go we would like to institute a cyclical system with our customers and packaging. Customers will be responsible for the cost of the containers, which will be returned if the container is returned in good condition. Ideally every time you pick up an order, you are dropping off last week’s packaging. If taken care of properly, all of our packaging can be reused many times. We appreciate your support in this endeavor.

Pre-Ordering Information

Our Weekly Menu, and available quantities, will be released Friday afternoon’s via facebook and email. We will sell what we have on a first come, first served basis, so please get your orders in early. Your meals will be ready for you at your desired pick-up location (listed below).
